Why grams win for baking
The single most impactful change most home bakers can make is switching to weighing ingredients. The reason: a cup of flour varies by 20-30% depending on how it is scooped. Scoop directly from the bag and you can easily pack 150-160g into a "cup." Spoon into the cup and level, and you get 120-125g. A 35% variation in flour changes whether a cake is light or dense, whether cookies spread or stay thick, whether bread has the right crumb structure.
Grams are unambiguous. 125g is 125g every time. Professional bakers never use volume measurements for dry ingredients. If a professional recipe gives cups, something was lost in conversion for the American audience.
Avoirdupois vs troy ounces
In cooking, "ounce" means avoirdupois ounce: 28.3495 grams. Troy ounces (used for precious metals) are 31.1035 grams — about 10% heavier. When gold is quoted per ounce, that is troy. When a recipe calls for ounces, that is avoirdupois. They are not interchangeable.
